Savta’s One-Pan Chicken Shawarma

This is Savta’s way of making shawarma at home. With just two spice blends and one pan, you get juicy, crispy chicken that tastes like real shawarma. Simple to prep, easy to cook, and full of flavor.

Ingredients (serves 4–6)

• 2½ lb chicken thighs
• 5 tablespoons olive oil
• ½ onion, thinly sliced
• 2 tablespoons cornstarch
• 2 tablespoons Savta’s Shabbat Rice Blend
• 1 tablespoon Savta’s Tipa Spicy Red Sauce Blend
• Salt to taste

Preparation

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the cornstarch, Shabbat Rice Blend, Tipa Spicy Red Sauce Blend, and salt.

  3. Add the olive oil and mix until you get a thick paste.

  4. Add the chicken thighs and massage well so every piece is fully coated.

  5. In a loaf pan, spread the sliced onion evenly on the bottom.

  6. Stack the chicken thighs tightly on top of the onion, pressing them together firmly so they form one compact loaf.

  7. Place the pan in the oven uncovered and roast for 40 to 45 minutes, until the top is browned and slightly crispy.

  8. Remove from the oven and let rest for 15 to 20 minutes.

  9. Once slightly cooled, carefully tilt the pan and drain off the excess juices and oil.

  10. Flip the shawarma loaf onto a cutting board.

  11. Using a sharp knife, slice thinly just like classic shawarma.

Serving Suggestions

Serve over rice, wrapped in a tortilla, or stuffed into warm pita.
Add hummus, tahini, Israeli salad, pickled onions, or anything that makes it feel like home.
