Ingredients (serves 4–6)
• 2 tablespoons olive oil
• 1 onion, chopped
• 3 cups butternut squash, cubed
• 3 medium carrots, sliced
• 1 medium sweet potato, cubed
• 4 cups vegetable stock
• 1 cup unsweetened plant-based cream
• 1 tablespoon Savta’s Tipa Spicy Red Sauce Blend
• Salt and black pepper to taste
• Optional toppings: olive oil, plant cream, toasted pumpkin seeds, salt flakes
Preparation
1. Bloom the spices
Heat olive oil in a medium pot over medium heat. Add Savta’s Tipa Spicy Red Sauce Blend and stir for a minute to open the flavors.
2. Build the base
Add the chopped onion and a pinch of salt. Cook until the onion is golden and fragrant.
3. Add the vegetables
Add the butternut squash, carrots, and sweet potato. Stir well so the vegetables are coated with the warm spices.
4. Simmer
Pour in the vegetable stock. Bring to a gentle boil, then lower the heat and cook for about 20 minutes until all the vegetables are soft.
5. Blend
Use a blender or immersion blender to blend the soup until smooth.
6. Finish
Stir in the plant-based cream and season with salt and pepper. Warm through on low heat.
7. Serve
Ladle into bowls and top with a drizzle of olive oil, cream, toasted pumpkin seeds, or salt flakes. Serve warm.
