This is Savta’s take on a smash burger. Juicy, crispy, and full of flavor, made with simple ingredients and cooked right on the stove. No bun needed. Just a tortilla, good meat, and Savta’s Ktzitzot Blend.

Ingredients (serves 4–6)

• 1 lb ground beef (93/7 recommended)
• ¼ onion, finely chopped
• ½ bunch parsley, finely chopped
• 1 egg
• 1 to 2 tablespoons Savta’s Ktzitzot Blend
• 1 tablespoon olive oil (Romano EVOO recommended)
• Salt to taste
• 4 to 6 tortillas

Preparation

  1. In a large mixing bowl, combine the ground beef, onion, parsley, egg, Savta’s Ktzitzot Blend, olive oil, and salt. Mix well until fully combined.

  2. Lay a tortilla flat and spread a thin, even layer of the meat mixture across the entire surface of the tortilla. Press it gently so it sticks well.

  3. Lightly oil a skillet and heat over high heat. Just before cooking, lower the heat to medium.

  4. Place the tortilla in the skillet meat side down. Press firmly and evenly across the tortilla while cooking for 1 to 2 minutes, until the meat is browned and crispy.

  5. Flip and cook for another minute until the tortilla is golden and crisp.

  6. Repeat with the remaining tortillas.

  7. Transfer to a plate or wooden board and garnish as desired.

Serving Suggestions

Top with chopped parsley, pistachios, or a drizzle of tahini.
Serve immediately while hot and crispy.
