Ingredients (serves 4–6)
• 2 tablespoons olive oil
• 1 tablespoon Savta’s Tipa Spicy Red Sauce Blend
• 1 red onion, sliced
• 4 cups pumpkin, peeled and cubed
• 1½ cups cooked chestnuts
• 1 teaspoon salt
• Fresh herbs for garnish (optional)

Preheat the oven to 390°F (200°C).

In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until soft and lightly golden.

Add the pumpkin cubes and sprinkle with Savta’s Tipa Spicy Red Sauce Blend. Stir for 1 to 2 minutes to coat the pumpkin, then add the salt.

Cook for about 5 minutes until the pumpkin begins to soften.

Transfer the mixture to a baking dish. Add the chestnuts and toss gently to combine.

Wet a sheet of parchment paper and place it directly over the pumpkin and chestnuts. Cover with another sheet of parchment paper and then aluminum foil to trap the moisture.

Roast for 40 minutes, until the pumpkin is tender and caramelized around the edges.
