These meatless meatballs are rich, saucy, and packed with the flavors of home. Savta loves using Impossible because it stays juicy, tender, and soaks up every bit of the sauce.
Ingredients (serves 4–6)
For the Meatballs
• 1 pack meatless blend (Savta loves Impossible)
• 1/2 red onion, finely chopped
• 1/2 bunch parsley, chopped
• 1 egg
• 2 tablespoons chickpea flour
• 1 full tablespoon Savta’s Ktzitzot Blend
• Salt, to taste
For the Sauce
• 1/2 red onion, chopped
• 2 to 3 garlic cloves, chopped
• Olive oil
• 1 full tablespoon Savta’s Tipa Spicy Red Sauce
• Salt, to taste
• 2 tablespoons tomato paste
• 1/2 bunch parsley, chopped
• Water, as needed
Preparation
Make the meatball mixture
In a large bowl, combine the meatless blend, red onion, parsley, egg, chickpea flour, Savta’s Ktzitzot Blend, and salt.
Mix until fully combined, then let the mixture rest in the fridge for 20 to 30 minutes.
Start the sauce
In a wide pot, heat olive oil over medium heat.
Add the red onion and garlic and sauté for about 2 minutes until fragrant.
Bloom the spices
Add Savta’s Tipa Spicy Red Sauce and let the spices bloom for about 1 minute.
Stir in the salt and tomato paste.
Build the sauce
Add water and mix until a rich sauce forms.
Add the meatballs
Shape the mixture into meatballs and gently place them into the sauce.
Add enough water to lightly cover the meatballs.
Cook
Cover and cook on low-medium heat until the meatballs are cooked through and the sauce thickens.
Finish
Add the remaining parsley and serve warm.
Serving Suggestions
Serve over rice or quinoa, or with warm challah to soak up every drop of the sauce.
